Gluten-Free Chocolate Chip Banana Muffins

Ingredients
  • 3-4 medium bananas, mashed
  • 3 eggs, whisked
  • 1 tsp vanilla extract
  • ½ cup almond butter
  • ⅓ cup almond flour
  • ¼ cup chocolate chips
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
Instructions
  1. Preheat oven to 350F.
  2. In a large bowl, combine bananas, eggs, almond butter, vanilla extract. Mix well.
  3. Add almond flour, chocolate chips, baking soda, baking powder, and salt. Mix well.
  4. Spoon batter into lined or greased muffin pan. I use silicone cups.
  5. Bake 25-30 mins, or until toothpick comes out clean.
